Cooking Steps

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic; sauté until soft and fragrant.
  • Stir in the shredded chicken, white beans, diced tomatoes, chicken broth, cumin, chili powder, salt, and pepper.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes.
  • Gently stir in the heavy cream or half-and-half and cook for an additional 5 minutes.
  • Serve hot, garnished with chopped cilantro and lime wedges.

Notes

For storage, let chili cool before transferring it to an airtight container. Refrigerate for up to 3 days or freeze for up to 3 months. Reheat gently, adding chicken broth as needed.
