  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • 14.5 oz can of diced tomatoes
  • 4 cups vegetable broth Can substitute with chicken broth if preferred.
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: herbs like thyme or parsley For added flavor.

  • In a large pot over medium heat, sauté the chopped onions, sliced carrots, and sliced celery until they become soft.
  • Add the chopped cabbage and continue to cook for another 5 minutes, stirring occasionally.
  • Stir in the can of diced tomatoes, vegetable broth, garlic powder, and any optional herbs you choose to use.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes or until the vegetables are tender.
  • Before serving, season with salt and pepper to taste.

Notes

This soup can be served with whole-grain bread or a fresh salad. For crunch, consider topped with homemade croutons or grated Parmesan cheese. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
