Ingredients
  

For the Soup Base

  • 2 lbs bone-in chicken thighs or whole chicken pieces Can be substituted with chicken breast
  • 8 cups low-sodium chicken broth Use vegetable broth for a vegetarian version
  • 2 cups water
  • 2 tablespoons fresh lemon juice
  • 1 can (14 oz) coconut milk For creaminess, optional

Aromatics and Vegetables

  • 2 tablespoons olive oil or coconut oil
  • 1 large yellow onion, diced
  • 3 medium carrots, sliced into rounds
  • 3 stalks celery, chopped
  • 4 cloves garlic, minced
  • 2 cups fresh spinach or kale, chopped
  • 1/4 cup fresh cilantro or parsley, chopped

Spices

  • 2 tablespoons ground turmeric (or 3 tablespoons fresh, grated) Essential for flavor and health benefits
  • 1 tablespoon fresh ginger, grated Can substitute with ground ginger
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper Essential for turmeric absorption

Optional Starches

Instructions
 

Preparation

  • Heat oil in a large, heavy-bottomed pot over medium heat. Add the diced onion and sauté for 3-4 minutes until it softens slightly.
  • Toss in the carrots and celery, cooking for another 3 minutes until they’re vibrant and bright.

Build the Flavor Base

  • Stir in the minced garlic, turmeric, ginger, cumin, and black pepper. Cook for about 30 seconds until your kitchen is filled with their fragrant aroma.

Add the Chicken and Liquid

  • Nestle the chicken pieces skin-side down into the pot. Pour in chicken broth and water, ensuring the chicken is covered by about an inch. Add the bay leaf and bring to a gentle boil over medium-high heat.

Simmer to Perfection

  • Once boiling, lower the heat and let your soup simmer for 45-60 minutes, or until the chicken shreds easily and the broth is golden from the turmeric.

Shred and Season

  • Remove the chicken from the pot and let it cool slightly. Shred the meat, discarding bones and skin.
  • Return the shredded chicken, then stir in the lemon juice and adjust the salt. If using coconut milk or leafy greens, add them now and let it simmer for another 2-3 minutes.

Final Touches

  • Discard the bay leaf, taste for seasoning, and adjust as needed. Garnish with fresh herbs right before serving.

Notes

For richer flavor, consider browning the chicken pieces before adding them to the pot. For thicker soup, let it simmer uncovered longer. Fresh turmeric root can be used for more flavor—just use roughly three times the amount of fresh over ground.
