  • 2 pieces lemons (juiced and zested)
  • 3 cloves garlic (minced)

  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups cooked fluffy rice
  • Fresh herbs for garnish (optional)

Preparation

  • In your slow cooker, combine the chicken broth, lemon juice, lemon zest, minced garlic, olive oil, thyme, rosemary, salt, and pepper.
  • Add the chicken breasts to the slow cooker, making sure they get coated in the flavorful mixture.
  • Cover and cook on low for 6-8 hours, or high for 3-4 hours until the chicken is cooked through and tender.
  • When the chicken is ready, shred it right in the slow cooker and stir it to mix with the sauce.

Notes

Store leftovers in an airtight container in the fridge for up to four days. You can freeze for longer storage. Adjust cooking time for larger chicken breasts to reach an internal temperature of 165°F.
