  • 12 oz penne or rotini pasta
  • 1 tbsp olive oil
  • 14 oz kielbasa sausage, sliced
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 2 cups chicken broth (low sodium)
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1 1/2 cups shredded cheddar or mozzarella cheese
  • Salt and pepper to taste
  • 1/2 tsp smoked paprika (optional)
  • Fresh parsley (for garnish)

  • In a large pot, heat the olive oil over medium heat. Add the sliced kielbasa and cook for 4–5 minutes, allowing it to brown.
  • Stir in the minced garlic and chopped onion; sauté for about 2 minutes until they are fragrant and translucent.
  • Pour in the chicken broth and heavy cream, bringing the mixture to a light simmer.
  • Add the pasta, stir well, cover the pot, and let it simmer for 10–12 minutes. Stir occasionally until the pasta is al dente.
  • Mix in the grated Parmesan cheese and stir until melted, creating a creamy sauce. Then, add the shredded cheddar or mozzarella and stir until fully melted.
  • Season your pasta with salt, pepper, and smoked paprika (if you’re using it).
  • Garnish with fresh parsley and serve hot. For an extra touch, sprinkle more grated Parmesan on top.

Notes

For added flavor, consider sautéing some red pepper flakes or your favorite herbs with the garlic and onion. Don’t rush the simmering time; let it go an extra minute or two to allow the pasta to absorb the flavors. If you’re looking to lighten it up, replace the heavy cream with half-and-half or whole milk; just know the sauce won’t be as rich.
