Mediterranean Quesadillas

Ingredients
  

For the quesadillas

  • 4 pieces flour tortillas
  • 1 cup fresh spinach, chopped Make sure to chop finely for even distribution.
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato, diced
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon olive oil For cooking the quesadillas.
  • to taste black pepper

Instructions
 

Filling Preparation

  • In a mixing bowl, combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, thinly sliced red onion, and a sprinkle of black pepper. Mix until well combined.

Assembly

  • Lay one flour tortilla flat on a clean surface. Place one-fourth of the filling mixture on one half of the tortilla, then fold the other half over to cover the filling.

Cooking

  • Heat a non-stick skillet over medium heat and add the olive oil.
  • Place the filled tortilla in the skillet and cook for about 3-4 minutes, or until the bottom is golden brown.
  • Carefully flip the quesadilla and cook for another 3-4 minutes, ensuring both sides are crispy and warm.
  • Once done, remove from the heat, slice into wedges, and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. For longer storage, freeze unassembled quesadillas for up to a month. Reheat cooked quesadillas in a skillet over medium heat.
