Low Carb Cheesy Garlic Chicken Wraps

Ingredients
  

Chicken Filling

  • 2 cups cooked chicken breast (shredded or use rotisserie chicken) Use rotisserie chicken for convenience or poach chicken breasts if preferred.
  • 1 cup shredded mozzarella cheese Use fresh mozzarella for better flavor.
  • 1/2 cup shredded cheddar cheese Feel free to substitute with other cheese types.
  • 2 cloves garlic (minced)
  • 1/4 cup cream cheese (softened) Ensure this is well softened for easy mixing.
  • 1 tablespoon olive oil For cooking the wraps.
  • 1 tablespoon fresh parsley (chopped) For garnish and added flavor.
  • 1 handful baby spinach (optional) Add for extra nutrition.

Wraps

  • 4 large low-carb tortillas or wraps Choose your preferred type for lower carbs.

Instructions
 

Preparation

  • Preheat a skillet or grill pan over medium heat and add olive oil.
  • In the meantime, warm your tortillas for about 10-15 seconds in the microwave, covered with a damp paper towel to prevent cracking.
  • In a mixing bowl, combine the shredded chicken, mozzarella, cheddar, softened cream cheese, minced garlic, parsley, and salt and pepper. If using spinach, add it now. Mix until the cream cheese evenly coats everything.

Assembly and Cooking

  • Divide the mixture equally among the four tortillas, placing about 1/2 cup in the center of each.
  • Roll each tortilla tightly, tucking in the sides to secure the filling as you go.
  • Place the wraps seam-side down in the preheated skillet. Cook for 2 to 3 minutes per side without moving them, until they’re golden brown and the cheese has melted and begun to ooze from the edges.
  • Remove from the skillet, slice in half diagonally, and serve hot. Garnish with extra parsley if desired.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to three days. For longer storage, consider wrapping them in foil and freezing. Be careful not to rush the cooking process to allow the cheese to melt perfectly.
