Ingredients
  

For the Crust

  • 1 cup all-purpose flour Can substitute with gluten-free flour.
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt

For the Filling

  • 2 large eggs Can use flax seed meal as an egg substitute.
  • 1 cup granulated sugar Can reduce for lower-sugar version.
  • 1/4 cup freshly squeezed lemon juice Fresh lemons recommended for best flavor.
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting To be used after cooling.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.
  • In a mixing bowl, combine the flour, softened butter, sugar, and salt. Blend until smooth.
  • Press this mixture into the bottom of the prepared pan to form the crust.
  • Bake the crust for about 15 minutes until it’s lightly golden.

Making the Filling

  • In another bowl, whisk together the eggs, sugar, lemon juice, lemon zest, and baking powder until fully combined.
  • Pour the lemon mixture over the baked crust.
  • Return to the oven and bake for an additional 20-25 minutes, or until the center is set.

Finishing Touches

  • Let the bars cool completely before cutting and dusting with powdered sugar.

Notes

These bars are best served chilled and can be enjoyed with ice cream or whipped cream. To enhance flavors, serve with fresh berries or a cup of herbal tea. Store leftovers in an airtight container in the fridge for up to a week.
