Base Ingredients

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar Can be substituted with coconut sugar.
  • 4 large eggs Use room temperature for best results.
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • Zest of 1 lemon Avoid the bitter white pith.
  • 1/2 cup fresh lemon juice

Glaze Ingredients

  • 1 cup powdered sugar
  • 1-2 tablespoons lemon juice Adjust for desired glaze consistency.

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  • In a large bowl, combine the melted butter and sugar. Mix until well-blended.
  • Add in the eggs and vanilla extract, stirring until smooth.
  • In another bowl, whisk together the flour, salt, and baking powder. Gradually add this mixture to the wet ingredients.
  • Gently fold in the lemon zest and lemon juice until everything is well incorporated.
  • Pour the batter into the prepared baking dish, spreading it out evenly.
  • Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  • While the brownies cool, prepare the glaze by mixing the powdered sugar with lemon juice until smooth.
  • Once the brownies have cooled, drizzle the glaze over the top and cut into squares. Enjoy!

Notes

These brownies can be stored in an airtight container at room temperature for up to three days, or refrigerated for a week. For freezing, wrap tightly in plastic wrap and aluminum foil; they can last up to three months. Thaw at room temperature before serving.
