  • 1 pound carrots, peeled and sliced Cut into uniform sizes for even cooking
  • 1 pound green beans, trimmed Fresh is recommended for better texture

For the Glaze

  • 2 tablespoons olive oil Used to toss the vegetables
  • 1/4 cup honey Can be substituted with maple syrup for a vegan option
  • 2 tablespoons lemon juice Adds acidity to balance the sweetness
  • 1 teaspoon ground cinnamon Adjust according to taste preference
  • 1/2 teaspoon ground nutmeg Can be replaced with ginger for extra warmth
  • to taste salt and pepper Season to your liking

For Garnish

  • 1 tablespoon chopped fresh parsley To add freshness when serving

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, toss the sliced carrots and green beans with olive oil, honey, lemon juice, ground cinnamon, nutmeg, salt, and pepper until everything is evenly coated.

Roasting

  • Spread the vegetables in a single layer on a baking sheet.
  • Roast for about 20-25 minutes, stirring halfway through, until the carrots are tender and caramelized, while the green beans are still tender-crisp.

Serving

  • Once done, remove from the oven and transfer to a serving dish.
  • Garnish with chopped fresh parsley and serve immediately.

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to three days. Reheat in the microwave or oven. Avoid freezing as it may change the texture.
