For the Cake

  • 1 box yellow cake mix Use any yellow cake mix of your choice.
  • 4 large eggs Room temperature for best results.
  • 1 cup water
  • 1/2 cup vegetable oil

For the Topping

  • 1 (8 oz) package cream cheese, softened Makes the frosting rich and creamy.
  • 1 cup powdered sugar Adjust sweetness to taste.
  • 1 (20 oz) can pineapple chunks, drained Can substitute with crushed pineapple.
  • 1 cup whipped topping
  • 1/2 cup shredded coconut Optional for additional texture and flavor.
  • 1/2 cup chopped nuts Optional for added crunch.

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  • In a large bowl, combine the yellow cake mix, eggs, water, and vegetable oil. Mix until smooth and well blended.
  • Pour the batter into the prepared baking pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool completely in the pan.
  • In a separate bowl, mix the softened cream cheese and powdered sugar until fully combined and smooth.
  • Spread the cream cheese mixture evenly over the cooled cake.
  • Top with drained pineapple chunks, then spread the whipped topping over the pineapple layer.
  • If desired, sprinkle with shredded coconut and chopped nuts for added crunch and flavor.
  • Refrigerate for at least an hour before serving to let the flavors meld.

Notes

Serve with fresh mint leaves, or pair with vanilla ice cream for an indulgent twist. Keeps well in the refrigerator for 3-4 days.
