  • 8 pieces flour or corn tortillas Corn tortillas can be used for a different flavor.
  • 2 cups enchilada sauce You can use store-bought or homemade enchilada sauce.
  • 1 cup shredded cheddar or Monterey Jack cheese Mix of cheeses can add extra flavor.
  • 1 medium onion, diced Adds sweetness and flavor.
  • 2 cloves minced garlic Enhances flavor.

Spices

  • 1 teaspoon cumin Adds an earthy flavor.
  • 1 teaspoon chili powder Adjust to taste for spiciness.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, brown the ground beef along with the diced onions for about 5 to 7 minutes until translucent.
  • Add the minced garlic, cumin, and chili powder to the skillet, and sauté for another minute until fragrant.

Assembly

  • Spoon the savory beef mixture onto each tortilla, roll them tightly, and place seam-side down in a greased baking dish.
  • Pour the enchilada sauce generously over the tortillas, then sprinkle the shredded cheese on top.

Baking

  • Bake uncovered for 20 to 25 minutes, until the enchiladas are bubbly and the cheese is melted.

Notes

For extra flavor, let tortillas warm slightly to make them easier to roll. You can also add bell peppers or spinach for more veggies.
