Preparation

  • Prepare your ingredients: Cut the beef into bite-sized pieces and halve the baby potatoes. If you like, parboil the potatoes for a few minutes to soften them slightly.
  • Sear the beef: In a skillet, heat the olive oil over medium-high heat. Once hot, add the beef bites and sear them until browned on all sides.
  • Make the garlic butter sauce: In a small bowl, mix the melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper together until well combined.
  • Combine in the slow cooker: Layer the halved baby potatoes in the bottom of the slow cooker, followed by the seared beef. Pour the garlic butter sauce over the top and add beef broth.
  • Cook: Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is fork-tender.
  • Let it rest: Allow the dish to rest for about 10 minutes before serving.

Notes

Serve with a fresh green salad or roasted vegetables; sprinkle with chopped fresh parsley before serving for added flavor. Store leftovers in an airtight container for up to 3-4 days, or freeze for 2-3 months.
