  • 2 pieces chicken breasts, poached You can use pre-cooked chicken for quicker prep.
  • 4 cups chicken broth Ensure it's gluten-free if needed.
  • 2 pieces carrots, diced
  • 2 pieces celery stalks, diced
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 cup green beans, chopped
  • 1 cup spinach or kale You can swap with other leafy greens.
  • 1 teaspoon thyme Fresh or dried, use less if dried.
  • 1 teaspoon rosemary Fresh or dried, use less if dried.
  • to taste salt and pepper Always taste before serving.
  • to garnish Fresh herbs (parsley or cilantro)

Instructions
 

Preparation

  • Bring the chicken broth to a boil in a large pot.
  • Add in the poached chicken breasts along with the diced carrots, celery, onion, and minced garlic.
  • Lower the heat and let it simmer for about 20 minutes until the vegetables become tender.
  • Add the chopped green beans and spinach or kale. Cook for an additional 5-7 minutes.
  • Season your soup with thyme, rosemary, salt, and pepper to taste.
  • Serve hot, garnished with your choice of fresh herbs.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. For freezing, portion into freezer-safe containers for up to 3 months. Reheat on the stove or microwave until warmed through.
