  • 1 lb Shredded boneless skinless chicken breasts The star of the dish

  • 4 cups Chicken broth The liquid base for our chili
  • 1 tsp Cumin For a warm, earthy flavor
  • 2 tsp Chili powder To spice things up

Instructions
 

Preparation

  • In a crockpot, combine the shredded chicken, corn, black beans, diced tomatoes, and cream cheese.
  • Add chopped onion, minced garlic, chicken broth, cumin, chili powder, salt, and pepper.
  • Stir to combine all ingredients well.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Before serving, stir well to combine and adjust seasonings as needed. Serve warm.

Notes

Best served topped with shredded cheese, sour cream, or sliced jalapeños. Pairs wonderfully with cornbread, tortilla chips, or a fresh salad. Leftovers can be stored in an airtight container for up to 4 days or frozen for up to three months.
