  • 1 lb ground beef Browned before adding to the crockpot.
  • 4 medium potatoes, diced
  • 1 medium onion, chopped
  • 2 pieces carrots, sliced
  • 2 stalks celery, sliced
  • 4 cups beef broth Adjust thickness as desired.
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version.
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Optional: garlic powder, onion powder

Preparation

  • In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and transfer it to a crockpot.
  • Add the diced potatoes, chopped onion, sliced carrots, and celery to the crockpot.
  • Pour in the beef broth and stir to combine.

Cooking

  • Cover and cook on low for 6-8 hours or high for 3-4 hours, until the vegetables are tender.
  • About 30 minutes before serving, stir in the heavy cream and shredded cheese.
  • Season with salt, pepper, and optional garlic or onion powder to taste.
  • Serve warm and enjoy your hearty soup!

Notes

For added texture, consider serving with crusty bread or homemade cornbread. This soup is kid-friendly and customizable with various veggies or cheeses.
