  • 1 1/4 cups single cream Substitute with coconut cream for a dairy-free option.
  • 2 tbsp grated parmesan cheese Plus more for serving.
  • 1/2 tsp ground black pepper
  • 1/2 tsp flaky salt
  • 1/2 tsp sugar

For the Noodles and Toppings

  • 7 oz ramen noodles Can swap for soba or udon noodles.
  • fresh cilantro For garnish.
  • bean sprouts For garnish.
  • edamame beans For garnish.
  • scallions For garnish.
  • chili oil For drizzling.

Preparation

  • Start by seasoning the chicken breasts, then dredge them in flour, shaking off the excess.

Searing the Chicken

  • In a large skillet, heat olive oil over medium heat. Cook the chicken for about 5-7 minutes per side until golden brown. Remove and set aside.

Making the Sauce

  • In the same skillet, add minced garlic and sun-dried tomatoes. Sauté until fragrant. Sprinkle in the smoked paprika, oregano, and red chili flakes.
  • Pour in the chicken stock and single cream, stirring to combine. Bring to a gentle simmer.
  • Return the chicken to the skillet and let it simmer in the sauce for around 10 minutes until cooked through.

Cooking the Noodles

  • In a separate pot, cook the ramen noodles according to package instructions. Drain and set aside.

Final Touches

  • Stir in grated parmesan cheese and season with black pepper, flaky salt, and sugar.
  • Add the cooked noodles to the sauce, mixing well.

Notes

Garnish with fresh cilantro and sliced scallions. Serve with a refreshing salad or crispy bread for a complete meal. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
