  • 1 cup Feta cheese Try using goat cheese for a tangy twist.
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • to taste Salt and pepper
  • 1/2 cup Parmesan cheese (optional) Recommended for extra creaminess.

Preparation

  • Cook the gnocchi according to the package instructions until they are tender and buoyant.
  • In a large skillet, heat a drizzle of olive oil over medium heat.
  • Add minced garlic and sauté, allowing the fragrant aroma to fill your kitchen.
  • Toss in the fresh spinach and cook until it wilts down beautifully.
  • Drain the cooked gnocchi and add them to the skillet with the spinach.
  • Crumble feta cheese over the mixture and stir gently to combine everything.
  • Season with salt and freshly cracked pepper to taste.
  • Serve warm, and add grated Parmesan on top for that extra layer of flavor.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat gently on the stove, adding a splash of water or olive oil to revive the creamy texture. Can freeze for up to two months in a freezer-safe container.
