  • 1 cup heavy cream Can replace with low-fat milk, but richer flavor comes from heavy cream.
  • 4 cloves garlic, minced Add more if you love garlic.
  • 1 cup mixed vegetables (like carrots and bell peppers) Feel free to substitute with vegetables like broccoli or snow peas.
  • 2 tablespoons soy sauce Adjust for taste.
  • 1 tablespoon olive oil For sautéing garlic.

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  • Pour in the chicken broth and bring to a gentle simmer.
  • Toss in the mixed vegetables and cook until tender, around 3-5 minutes.
  • Stir in the ramen noodles and cook according to package instructions, usually about 3-4 minutes.
  • Once the noodles are cooked, add the heavy cream and soy sauce, stirring to combine well.
  • Gently fold in the sliced chicken and allow it to heat through.
  • Season with salt and pepper to taste before serving.
  • Serve hot, garnished with green onions.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For freezing, separate the broth and noodles to maintain texture.
