  • 2 pieces boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 2 packs ramen noodles Avoid flavor packets.
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 cup baby spinach
  • 1 cup sliced mushrooms
  • 1/2 cup heavy cream Can substitute with half-and-half or coconut milk.
  • Salt and pepper to taste
  • Chopped green onions for garnish

Preparation

  • Heat olive oil in a large pot over medium heat. Add the minced garlic and sauté for about a minute until fragrant.
  • Season the chicken breasts with salt and pepper, then place them in the pot. Cook for approximately 6-7 minutes on each side until they’re cooked through. Once done, remove the chicken and slice it.

Cooking

  • In the same pot, pour in the chicken broth and bring it to a gentle boil. Add the ramen noodles and cook according to the package instructions, usually around 3-5 minutes.
  • Toss in the broccoli, spinach, and mushrooms, letting them simmer for about 3-4 minutes until they become tender.
  • Stir in the heavy cream and return the sliced chicken to the pot. Mix everything well and adjust seasoning if needed.
  • Serve hot, garnished with chopped green onions for an extra pop of flavor and freshness.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. When reheating, add a small splash of broth or cream. For long-term storage, freeze the broth and chicken mixture (without noodles) for up to two months.
