  • 12 pieces potstickers (homemade or frozen)
  • 4 cups chicken or vegetable broth Veggie broth can be used for a lighter version.
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 can coconut milk Can substitute with heavy cream or a dairy-free alternative.
  • 2 tablespoons soy sauce Use tamari for gluten-free version.
  • 2 tablespoons fresh lime juice
  • 1/4 cup cilantro, chopped Additional for garnish.
  • 1/4 cup green onions, sliced Additional for garnish.

  • In a large pot, heat a splash of oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant.
  • Pour in the chicken or vegetable broth and bring to a simmer.
  • Stir in the coconut milk, soy sauce, and lime juice.
  • Add the potstickers gently into the broth. Let them cook for about 5-7 minutes or until they’re heated through.
  • Stir in the chopped cilantro and green onions just before serving.

Notes

Garnish with additional cilantro or lime wedges for a fresh pop. Pair it with steamed jasmine rice or crispy spring rolls. For added crunch, top with crushed peanuts or sesame seeds. This soup can be easily customized with vegetables and proteins as desired.
