Preparation

  • In a large pot, heat a splash of oil and sauté the chopped onion, minced garlic, and ginger until fragrant.
  • Sprinkle in the curry powder and stir for about a minute, allowing the spices to bloom.
  • Pour in the coconut milk and vegetable broth, then bring the mixture to a gentle simmer.
  • Add the diced carrots, bell peppers, and snap peas. Let them cook for about 10 minutes until tender.
  • Gently add the dumplings to the pot, cooking them according to the package instructions or until they start to float.
  • Season your soup with salt and pepper to taste.
  • Serve hot, garnished with a few sprigs of fresh cilantro.
