  • 2 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 cup egg noodles or any noodles of your choice Can substitute with rice noodles, whole grain pasta, or zoodles.
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • Salt and pepper to taste
  • Chopped green onions for garnish

Cooking Process

  • In a large pot, heat a bit of oil over medium heat.
  • Sauté the minced ginger and garlic until fragrant, about 1-2 minutes.
  • Add in the sliced carrots and celery. Stir and cook until they are slightly softened.
  • Pour in the chicken broth and bring the mixture to a boil.
  • Once boiling, add the cooked chicken and noodles. Lower the heat and simmer until the noodles are tender, which usually takes about 5 minutes.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with chopped green onions.

Notes

For enhanced flavor, roast your garlic and ginger beforehand. You can also add a splash of soy sauce or lemon juice before serving. Store soup in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
