Ingredients
  

For the salad

  • 1 bunch Kale Remove the stems and tear into bite-sized pieces
  • 2 medium Oranges Juicy and fresh, diced
  • 2 medium Apples Sweet and crunchy, diced
  • 1 cup Pomegranate seeds For a tart and juicy addition
  • 1/2 cup Pepitas For a crunchy topping

For the lemon vinaigrette

  • 1/4 cup Olive oil Base of the dressing
  • 2 tablespoons Fresh lemon juice For acidity and brightness
  • 1/2 teaspoon Salt To taste
  • 1/4 teaspoon Black pepper To taste

Preparation

  • Remove the stems from the kale and tear the leaves into bite-sized pieces.
