  • 2 pieces apples, diced (Fuji or Honeycrisp are great choices) Sweet apples work best for flavor and texture.
  • 1/4 cup raisins or dried cranberries (optional) Add for extra sweetness and texture.
  • 1/4 cup chopped nuts (like walnuts or pecans) Can be substituted with seeds for a nut-free version.

Dressing Ingredients

  • 1/4 cup plain yogurt or mayonnaise Greek yogurt can be used as a low-fat alternative.
  • 1 tablespoon honey or maple syrup Adjust sweetness to taste.
  • 1 tablespoon lemon juice Freshly squeezed is best.
  • to taste salt and pepper Adjust according to preference.

Preparation

  • In a large bowl, combine the grated carrots and diced apples.
  • If using, add the raisins and nuts, mixing gently to combine.
  • In a small bowl, whisk the yogurt (or mayonnaise), honey (or maple syrup), lemon juice, salt, and pepper until smooth.
  • Pour the dressing over the salad and toss well to coat all the ingredients.
  • Serve immediately, or chill for about 30 minutes to enhance the flavors.

Notes

This salad can shine on its own or be a fantastic side to grilled chicken or fish. Best consumed within 2-3 days. Keep leftovers in an airtight container.
