Ingredients
  

For the Pastry

  • 1 sheet thawed puff pastry
  • 1 large egg for egg wash

For the Vanilla Cream Filling

  • 1 cup heavy cream Can substitute with coconut cream or dairy-free alternatives.
  • 1/4 cup powdered sugar Adjust based on sweetness preference.
  • 1 teaspoon vanilla extract

For the Blueberries

  • 1 cup fresh blueberries Frozen blueberries can be used but may add extra moisture.
  • 1 tablespoon sugar
  • 1 tablespoon cornstarch

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Roll out the puff pastry on a lightly floured surface. Cut it into rings using two different sizes of cookie cutters or round objects.
  • Place the rings on a baking sheet lined with parchment paper and brush them with the egg wash.

Baking

  • Bake the pastry rings in the preheated oven for 15-20 minutes or until golden brown. Let them cool completely.

Filling Preparation

  • While the pastry is baking, prepare the vanilla cream filling by whipping the heavy cream, powdered sugar, and vanilla extract together until soft peaks form.
  • For the blueberry topping, combine the blueberries, sugar, and cornstarch in a saucepan over medium heat. Cook until the blueberries begin to burst and thicken, about 5-7 minutes. Let it cool slightly.

Assembly

  • Once the pastry rings are cool, fill the center with the vanilla cream and top with the blueberry mixture.

Notes

Best enjoyed with a light dusting of powdered sugar, whipped cream, or vanilla ice cream. Can also be served with coffee or tea.
