  • 1 cup long-grain rice Soaking the rice before cooking can improve texture.
  • 1 pound sausage (such as kielbasa or chorizo), sliced Feel free to substitute with chicken sausage or plant-based options.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth Use vegetable broth for a vegetarian version.
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional) Adds flavor and color to the dish.

Cooking Instructions

  • In a large pot or skillet, heat some oil over medium heat.
  • Add the sausage and cook until browned.
  • Toss in the onion and garlic, sautéing until they soften.
  • Stir in the rice, black beans, cumin, smoked paprika, salt, and pepper.
  • Pour in the chicken broth and bring to a boil.
  • Reduce the heat, cover, and let it simmer for about 20 minutes, or until the rice is tender and has absorbed the liquid.
  • Fluff with a fork and garnish with cilantro if desired before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, warm on the stove with a splash of broth or water. Freezing is possible for up to 3 months; thaw in the fridge overnight before reheating.
