Ingredients
  

For the Salmon Bites

  • 1 lb fresh salmon (skinless and cut into bite-sized cubes)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping

For the Bang Bang Sauce

  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha adjust to spice level
  • 1 tsp honey (optional)
  • Juice of ½ lime

For Serving

  • 2 cups cooked jasmine rice or cauliflower rice for a lower-carb option
  • 1 cup shredded purple cabbage
  • 1 medium avocado (sliced)
  • ½ cup shredded carrots
  • 2 pcs green onions (sliced)
  • to taste fresh cilantro and sesame seeds for garnish

Instructions
 

Preparation

  • Preheat your oven to 400°F or preheat your air fryer for a crispier texture.
  • In a bowl, mix the garlic powder, smoked paprika, salt, and black pepper. Toss the salmon cubes in this spice mixture until they’re well coated.
  • Take each seasoned salmon piece and coat it in panko breadcrumbs, ensuring each bite is evenly covered.

Cooking

  • Place the coated salmon cubes on a baking sheet or in your air fryer basket. Brush lightly with olive oil or spray and bake for about 12-15 minutes, or air fry for 8-10 minutes, until golden.
  • In a separate bowl, combine mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice to make the Bang Bang sauce.

Assembly

  • On a plate, layer your cooked rice, top with the crispy salmon bites, and add shredded cabbage, avocado slices, and shredded carrots.
  • Drizzle with the Bang Bang sauce, and finish with sliced green onions, fresh cilantro, and a sprinkle of sesame seeds.

Notes

To store, keep leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven or air fryer to retain crispiness.
